中文摘要: 为研究乙醇浓度、搅拌时间及甜橙油添加量制得除萜甜橙油的香气成分特征,采用气相色谱-质谱联用(gas chromatography-mass spectrometry,GC-MS)技术对其挥发性成分进行检测分析。以巴西甜橙油为原料,利用水洗法除萜,得到13组样品。结果表明,甜橙油与13组除萜甜橙油共检测出55 种挥发性成分。其中烷烯烃类17 种、醛类12 种、醇类15 种、酮类4 种、酸类3 种、酯类3 种、酚类1 种。除萜甜橙油中的柠檬烯含量占未处理甜橙油的7%~45%;与未处理的甜橙油相比,醛类含量增加160 倍~700倍,醇类含量增加130 倍~1 380 倍。水洗法可去除甜橙油萜烯类物质,同时富集萜烯类氧化物。通过主成分分析及聚类分析将13组除萜甜橙油的香气强度分为4组,其中α-蒎烯、月桂烯、柠檬烯、辛醛、壬醛、癸醛、反,反-2,4-癸二烯醛、芳樟醇、十二醛9 种香气成分的香气特征影响值(aroma character impact,ACI)之和在各自样品中均大于98%。
Abstract:Gas chromatography-mass spectrometry (GC-MS) was used to investigate the aroma characteristics of deterpened sweet orange oil from alcohol concentrations,stirring times and sweet orange oil addition amounts. 13 kinds of deterpene sweet orange oil were obtained by alcohol solution method which remove terpene from Brazilian sweet orange oil. The results showed that 55 volatile components were detected in sweet orange oil and 13 kinds of deterpene sweet orange oil,including 17 alkenes,12 aldehydes,15 alcohols,4 ketones,3 acids,3 esters and 1 phenol. The limonene content in deterpene sweet orange oil accounted for 7%-45% of that in unprocessed sweet orange oil. Compared with unprocessed sweet orange oil,the aldehyde content increased by 160-700 times. The alcohol content increased by 130-1 380 times. And the Alcohol Solution Method not only removed the terpene substances in sweet orange oil,but also enriched the terpene oxides.Through principal component analysis and cluster analysis,the aroma intensity of 13 kinds of deterpene sweet orange oil could be divided into 4 groups. The aroma character impact of the sum of 9 aroma components (α-pinene,myrcene,limonene,octanal,nonanal,decanal,(E,E)-2,4-decadienal,linalool and dodecanal) was more than 98% in each sample.
