中文摘要: 为研究不同部位牛肉的品质差异,选取体质量为550 kg左右的西门塔尔牛10头,屠宰分割后取上脑、前腱、外脊、胸肉、臀肉5 个不同部位的牛肉。4 ℃排酸72 h后,分别测定不同部位牛肉的pH值、蒸煮损失、水分含量、糖原含量、蛋白质含量、脂肪含量、色泽、质构特性、硬度、氨基酸含量及矿物质含量。结果表明,前腱和臀肉的pH值、蒸煮损失有显著性差异(P<0.05);前腱和上脑的水分含量差异显著(P<0.05);胸肉和前腱、外脊的糖原含量差异显著(P<0.05);臀肉、外脊和前腱的蛋白质含量有显著性差异(P<0.05);臀肉和前腱、外脊的脂肪含量差异显著(P<0.05);臀肉和上脑、前腱的L*值存在显著性差异(P<0.05);外脊的a*值与上脑、前腱、臀肉、胸肉的a*值存在显著性差异(P<0.05);臀肉、胸肉和上脑的b*值具有显著性差异(P<0.05);前腱的氨基酸总含量最高;各部位的矿物质元素组成和含量各有优势。综上,不同部位西门塔尔牛肉的营养品质和理化品质存在差异,其牛肉适宜的加工方式和产品不同,总体来说,前腱的加工性能更优。
Abstract:To study the quality difference of beef in different parts,10 Simmental cattle weighing about 550 kg were selected. After slaughtering and splitting,beef was taken in five different parts,including chuck roll,front tendon,striploin,brisket,and rump. After 72 h of acid discharge at 4 ℃,the following parameters of beef in these different parts were determined:pH value,cooking loss,color,textural characteristics,hardness,as well as the content of moisture,glycogen,protein,fat,amino acids,and minerals. According to the results,statistically significant differences were observed (P<0.05) in the following aspects:pH values and cooking loss between front tendon and rump;moisture content between front tendon and chuck roll(P<0.05);glycogen content in brisket compared to front tendon and striploin (P<0.05);protein content between rump,striploin,and front tendon (P<0.05);fat content in rump compared to front tendon and striploin (P<0.05);the L* values of rump compared to chuck roll and front tendon(P<0.05);the a* values of striploin compared to chuck roll,front tendon,rump,and brisket(P<0.05);as well as the b* values between rump,brisket and chuck roll(P<0.05). The highest total amino acid content was observed in the front tendon,while the composition and content of mineral elements were advantageous in each part. In conclusion,the nutritional and physicochemical qualities of Simmental beef vary among different cuts,which therefore correspond to different suitable processing methods and products.. In general,the front tendons have better processing performance.
