中文摘要: 该研究以党参黄芪复合茶为材料,研究不同冲泡条件下茶汤总酚含量、总黄酮含量、总抗氧化能力、2,2′-联氮-双-3-乙基苯并噻唑啉-6-磺酸[2,2′-azino-bis-(3-ethylbenzthiazoline-6-sulfonic acid),ABTS]阳离子自由基清除率、1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基清除率和羟自由基清除率的变化规律,并采用响应面法优化党参黄芪复合茶的冲泡条件。结果表明,党参黄芪复合茶茶汤的总酚含量、总黄酮含量、总抗氧化能力、ABTS+自由基清除率、DPPH自由基清除率和羟自由基清除率随冲泡水量的增加呈下降趋势,冲泡水量为100 mL时,抗氧化指标均达到峰值;冲泡时间25 min、冲泡温度90 ℃时,茶汤的总抗氧化能力最强。响应面法优化后的最佳冲泡条件为冲泡水量100 mL、冲泡时间26.2 min、冲泡温度90 ℃,在此条件下党参黄芪复合茶茶汤的总抗氧化能力为1.638 μmol/mL,与预测值1.645 μmol/mL接近,证实了该模型的可行性。
Abstract:This study used a composite tea prepared from Codonopsis pilosula and Astragalus membranaceus as materials to investigate the changes in total phenolic content,total flavonoid content,total antioxidant capacity,2,2′-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) cation radical scavenging rate,1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging rate,and hydroxyl radical scavenging rate of the tea infusion under different brewing conditions. Response surface methodology was further used to optimize the brewing conditions of the C. pilosula and A. membranaceus composite tea. The results showed that the total phenolic content,total flavonoid content,total antioxidant capacity,ABTS+ radical scavenging rate,DPPH radical scavenging rate,and hydroxyl radical scavenging rate of the tea infusion decreased with the increase in brewing water volume. When the brewing water volume was 100 mL,all antioxidant indicators reached their peak values. The total antioxidant capacity of the tea infusion was the highest when the brewing time was 25 min and the brewing temperature was 90 ℃. The optimal brewing conditions obtained by response surface methodology were a brewing water volume of 100 mL,a brewing time of 26.2 min,and a brewing temperature of 90 ℃. Under these conditions,the total antioxidant capacity of the composite tea infusion was 1.638 μmol/mL,which was close to the predicted value of 1.645 μmol/mL,confirming the feasibility of the model.
