中文摘要: 油酱分离严重影响芝麻酱的品质,该文采用油凝胶技术改善芝麻酱的稳定性问题。结果表明,在5种常见的油凝胶剂中,单硬脂酸甘油酯(单甘酯)降低芝麻酱离心出油率的效果最佳,且当其添加量为4%、凝胶化加热温度为80 ℃、加热时间为55 min、冷却时间为4 h时效果最佳,但酱体的流动性显著降低。将单甘酯与其他油凝胶剂或非凝胶剂类物质进行复配,发现吐温20具有最好的协同效应,且当2%单甘酯与0.5%吐温20在油凝胶制备阶段时复配效果最佳,芝麻酱的离心出油率进一步降低4.91%、流动性增加3.16%。在此条件下制备的芝麻酱贮藏稳定性明显提高,且与原芝麻酱及由单甘酯凝胶化处理的芝麻酱相比固体颗粒粒径显著变小、涂抹性更好、触变性更强、氧化稳定性更佳,贮藏后的感官品质更优。
Abstract:Oil-sesame separation seriously impairs the quality of sesame paste. In this study, oleogelation technology was adopted to solve this stability problem. The results indicated that, among the 5 common oleogelators, glyceryl monostearate (GMS) was the most effective in reducing the centrifugal oil exudation rate of sesame paste, and the optimal gelation conditions were as follows: GMS addition amount of 4%, heating temperature of 80 ℃, heating time of 55 min, and cooling time of 4 h. Under such conditions, the gelatinized sesame paste showed a significantly reduced centrifugal oil exudation rate, but its flowability decreased significantly. To address this problem, GMS was further compounded with other oleogelators or non-oleogelator substances. It was found that Tween 20 had the best synergistic effect, and the optimal combination was 2% GMS combined with 0.5% Tween 20 during the oleogel preparation stage. This formulation further reduced the centrifugal oil exudation rate of the gelatinized sesame paste by 4.91% and increased its flowability by 3.16%. The sesame paste prepared under these conditions had significantly improved storage stability. In addition, compared with the original sesame paste and the one treated with GMS alone for gelation, the sesame paste co-gelatinized by GMS and Tween 20 had a significantly smaller solid particle size, better spreadability, stronger thixotropy, better oxidation stability, and better sensory quality after storage.
