添加木糖醇对小麦面团加工特性与面包品质的影响

中文摘要: 以木糖醇部分替代面包配方中的蔗糖,采用直接发酵法制备面包,研究不同木糖醇添加量对小麦面团加工特性及面包品质与贮藏稳定性的影响。结果表明,随着木糖醇添加量的增加,小麦粉吸水量下降,面团形成时间和稳定时间整体延长;木糖醇添加量超过4.00%时,面团的拉伸能量、延伸度和最大拉伸阻力均整体增加。木糖醇添加量≤5.00%时,面包发酵时间不受木糖醇添加量的影响。面包比容和感官评分随木糖醇添加量的增加整体先升高后降低。木糖醇添加量为3.00%~4.00%时,面包的体积大、硬度低、感官评分高;添加3.00%以上的木糖醇能够显著降低贮藏期面包的过氧化值。
Abstract:Xylitol was used as a partial substitute for sucrose in bread formulation, and bread was prepared using the straight-dough method. The effects of different xylitol addition levels on the processing properties of wheat dough, as well as on the quality and storage stability of bread, were investigated. The results showed that increasing xylitol addition reduced the water absorption of wheat flour, but generally prolonged dough development time and stability time. When the xylitol level exceeded 4.00%, the extensograph energy, extensibility, and maximum resistance to extension showed an overall increase. Xylitol addition levels ≤5.00% did not affect bread fermentation time. The specific volume and sensory score initially increased and then decreased with increasing xylitol addition. At xylitol addition levels of 3.00%-4.00%, the bread exhibited larger volume,lower hardness, and higher sensory scores. Furthermore, the addition of more than 3.00% xylitol significantly reduced the peroxide value of bread during storage.
