山楂荷叶粉对果冻质构特性的影响

中文摘要: 以食药同源中药材山楂、荷叶、决明子为主要原料,考察中药物质成分对果冻质构特性的影响,并初步分析其原因。采用喷雾干燥法制得山楂荷叶粉,测定其理化性质和指标性成分含量。以山楂荷叶粉制得果冻为试验组,麦芽糊精制得果冻为空白组,对比两组果冻质构特性和微观结构差异,进一步分析药食同源成分对果冻成型性和质构特性的影响。测定结果显示,山楂荷叶粉中药材来源的物质可以明显提高果冻的硬度、胶黏性、咀嚼性(硬度提升64.16%、胶黏性提升88.39%,咀嚼性提升101.20%),果冻的析水率降低46.875%。山楂荷叶粉所含黄酮类和生物碱类小分子物质可以提供更多的氢键作用位点,更有利于凝胶内部通过物理交联形成黏弹性体系,同时也可以提供更多的离子形态成分协助凝胶化反应。
Abstract:By using medicinal and edible Chinese herbal medicines such as hawthorn, lotus leaf, and cassia seed as the main raw materials, the effects of traditional Chinese medicine components on the texture properties of jelly were investigated, and the reasons were preliminarily analyzed. Hawthorn-lotus leaf powder was prepared by spray drying, and its physicochemical properties and index component contents were determined.The jelly prepared with hawthorn-lotus leaf powder was used as the experimental group, and the jelly prepared with maltodextrin was used as the blank group. The differences in texture properties and microstructure between the two groups were compared to further analyze the effects of medicinal and edible components on the formability and texture properties of jelly. The results showed that the substances derived from hawthorn-lotus leaf powder significantly improved the texture properties such as hardness, adhesiveness, and chewiness of the jelly (hardness increased by 64.16%; adhesiveness increased by 88.39%, and chewiness increased by 101.20%), and the water separation rate of the jelly decreased by 46.875%. It was speculated that the small molecular substances such as flavonoids and alkaloids contained in the hawthorn-lotus leaf powder provided more hydrogen bonding sites, which was more conducive to the formation of a viscoelastic system through physical crosslinking inside the gel and provided more ionic components to assist the gelation reaction.
