中文摘要: 竹笋因营养价值高、风味独特且易腐败,对干燥与粉碎工艺提出较高技术要求。该文系统综述热风、热泵、微波、真空冷冻及膨化等干燥方法及其联合应用,比较其在干燥效率、营养保持、色泽与复水性方面的差异。进一步阐述高频振动、气流、机械球磨及低温冲击磨等超微粉碎技术对竹笋粉理化特性与功能性的影响,并总结竹笋及改性膳食纤维在饮料、面制品、肉制品和淀粉类食品中的应用,展望其在功能性食品开发中的应用前景。

Abstract:Bamboo shoots, due to their high nutritional value, unique flavor, and susceptibility to spoilage,present significant technical challenges for drying and grinding processes. Therefore, this paper systematically reviewed various drying methods including hot air, heat pump, microwave, vacuum freeze, and puffing, as well as their combined applications, comparing their differences in drying efficiency, nutrient retention,color, and rehydration. It further elaborated on the effects of ultrafine grinding technologies, such as high-frequency vibration, air flow, mechanical ball milling, and low-temperature impact milling, on the physicochemical properties and functionality of bamboo shoot powder. Finally, this paper summarized the application of bamboo shoot powder and modified dietary fibers in beverages, flour products, meat products, and starchbased foods, highlighting the broad prospect in functional food development.
