中文摘要: 为探明不同板栗品种间的氨基酸含量、组成特征及营养价值差异情况,采用液相色谱-串联质谱技术测定山东地区的 10 个板栗品种(3113板栗 、金平-徂徕山板栗、石丰板栗、黄蓬板栗、金平板栗、燕山红板栗、蒙早板栗、一串红板栗、沂丰板栗、丽抗板栗)中 20 种氨基酸含量,计算氨基酸总量、必需氨基酸、风味氨基酸和特殊功效氨基酸含量等指标,结合世界卫生组织/联合国粮农组织氨基酸模式谱,通过氨基酸比值、氨基酸比值系数和比值系数分进行营养评价,利用主成分分析和聚类分析进行综合排序与分类。结果表明,10 个板栗品种氨基酸总量为 3 460.78~6 757.29 μg/g,各个品种间差异明显。蒙早板栗的氨基酸总量最高( 6 757.29 μg/g ),丽抗板栗的必需氨基酸含量(1 573.71 μg/g)及氨基酸比值系数分(70.89)最高。所有板栗品种中蛋氨酸和半胱氨酸为第一限制性氨基酸。风味分析显示,鲜味氨基酸和甜味氨基酸为主要风味成分,黄蓬板栗的鲜味氨基酸占比最高(32.09%)。丽抗板栗的支链氨基酸和芳香族氨基酸含量最高,分别为 716.39 μg/g和 389.21 μg/g。主成分分析综合得分排名前五的品种依次为蒙早板栗、丽抗板栗、黄蓬板栗、金平板栗和沂丰板栗。综上,板栗氨基酸组成全面,丽抗板栗和蒙早板栗为综合表现最优品种。
Abstract:To investigate the differences in amino acid content, composition characteristics, and nutritional value among different chestnut varieties, liquid chromatography-tandem mass spectrometry was used to determine the contents of 20 amino acids in 10 chestnut varieties from the Shandong region (3 113, Jinping-Culai Mountain, Shifeng, Huangpeng, Jinping, Yanshanhong, Mengzao, Yichuanhong, Yifeng, and Likang). The contents of total amino acids, essential amino acids, flavor amino acids, and special functional amino acids were calculated. Combined with the amino acid pattern recommended by the World Health Organization/Food and Agriculture Organization, nutritional evaluation was conducted using amino acid ratios, amino acid ratio coefficients, and ratio coefficient scores. Principal component analysis and cluster analysis were applied for comprehensive ranking and classification. The results showed that the total amino acid contents of the 10 chestnut varieties ranged from 3 460.78 μg/g to 6 757.29 μg/g, with significant differences among varieties. Mengzao chestnut had the highest total amino acid content (6 757.29 μg/g), while Likang chestnut had the highest essential amino acid content (1 573.71 μg/g) and amino acid ratio coefficient score (70.89). Met+Cys was the first limiting amino acid in all chestnut varieties. Flavor analysis indicated that umami amino acids and sweet amino acids were the main flavor components, and Huangpeng chestnut had the highest proportion of umami amino acids (32.09%). Likang chestnut had the highest contents of branched-chain amino acids and aromatic amino acids, at 716.39 μg/g and 389.21 μg/g, respectively. According to the comprehensive scores of principal component analysis, the top five varieties were Mengzao, Likang, Huangpeng, Jinping, and Yifeng chestnuts. Overall, chestnuts had a comprehensive amino acid composition, and Likang and Mengzao chestnuts were the varieties with the best overall performance.
