中文摘要: 针对叶酸(folic acid,FA)及其衍生物(如6S-5-甲基四氢叶酸)存在的稳定性差与生物利用度低等问题,对相关代谢路径进行系统综述,重点综述光照、温度、pH值及氧气等关键环境因素对叶酸及其衍生物稳定性的影响机理。在此基础上,探讨通过优化包封技术、添加适宜稳定剂以及控制外部环境等策略以提高其稳定性的可行性。该综述旨在为叶酸类物质在食品工业与药品制剂中的有效应用提供理论参考与实践依据。

Abstract:In view of the poor stability and low bioavailability of folic acid (FA) and its derivatives,such as 6S-5-methyltetrahydrofolate (6S-5-MTHF),this study systematically reviewed their relevant metabolic pathways.Emphasis was placed on elucidating the mechanisms by which key environmental factors,including light,temperature,pH,and oxygen,affect their stability.On this basis,the feasibility of strategies to enhance stability,such as optimizing encapsulation techniques,incorporating appropriate stabilizers,and controlling external environmental conditions,was explored.This review aimed to provide a theoretical reference and practical basis for the effective application of FA compounds in the food industry and pharmaceutical formulations.
