中文摘要: 在人工智能技术快速发展的背景下,人工智能在食品工业中的融合应用,推动了面包行业向智能化方向变革。该文深入探讨人工智能在面包烘焙全过程中的关键技术框架,综合梳理基于数据驱动与算法支撑的智能方法在烘焙领域的应用,围绕多模态数据融合与特征提取、核心工艺智能调控及产品品质精准评价展开,详细阐释深度学习、机器视觉等关键技术促进生产工艺优化与标准化生产的内在机制,为人工智能在烘焙行业的实践应用提供参考。
Abstract:With the rapid advancement of artificial intelligence technology,its integration into the food industry has driven transformative shifts toward intelligent operations in the bread-making sector.This paper examined the key technological frameworks of AI across the entire bread-baking process and comprehensively reviewed the application of data-driven and algorithm-based intelligent methods in baking,focusing on multimodal data fusion and feature extraction,intelligent regulation of core processes,and precise evaluation of product quality.Furthermore,this paper clarified the intrinsic mechanisms through which key technologies such as deep learning and machine vision promoted production process optimization and standardized production,providing a reference for the practical application of artificial intelligence in the baking industry.
