中文摘要: 为提高欧李果酒的品质和稳定性,以欧李鲜果为材料,选用5 种澄清剂对发酵后的欧李果酒进行澄清处理,通过出酒率、浊度、感官评价以筛选各澄清剂的最佳使用浓度,然后比较不同澄清剂对欧李果酒的单宁含量、花色苷含量、色度、色调和稳定性的影响。结果表明,1 号~5 号澄清剂的最佳处理浓度分别为800 mg/L皂土、800 mg/L交联聚乙烯吡咯烷酮(crosslinking polyvingypyrrolidone,PVPP)+800 mg/L皂土、80 mg/L蛋清粉、40 mg/L明胶+400 mg/L皂土、80 mg/L土豆蛋白粉,其中澄清剂4 号的澄清度和出酒率较高(94.8%),2 号能改善色调,4 号对单宁、花色苷和色度减损最大,4 号和5 号的稳定性最好,感官评分为92和95。综上,5 号澄清剂(80 mg/L土豆蛋白粉)处理欧李果酒为最佳澄清方案,果酒澄清度和出酒率(91.3%)较高,稳定性好,香气平衡协调,感官品质高。

Abstract:The stability and quality of Cerasus humilis fruit wine were improved.Five clarifiers were selected to treat the wine produced by fermentation with the fresh fruits of C.humilis.The optimal concentration of each clarifier was screened based on the alcohol yield,turbidity,and sensory quality.Then,the effects of different clarifiers on tannins,anthocyanins,chroma,hue,and stability of the wine were compared.The results showed that the optimal treatment concentrations of clarifiers 1-5 were 800 mg/L bentonite,800 mg/L crosslinking polyvingypyrrolidone (PVPP)+800 mg/L bentonite,80 mg/L ovalbumin,40 mg/L gelatin+400 mg/L bentonite,and 80 mg/L patatin,respectively.Among them,clarifier 4 had the highest clarity and alcohol yield (94.8%).Clarifier 2 improved the hue,and clarifier 4 caused the greatest losses of tannins,anthocyanins,and chroma.Clarifiers 4 and 5 showed the best stability with sensory evaluation scores of 92 and 95,respectively.In conclusion,treating C.humilis fruit wine with clarifier 5 (80 mg/L patatin) resulted in high clarity and alcohol yield(91.3%),good stability,excellent taste,pleasant aroma,and high sensory quality.
