中文摘要: 该研究以药食同源鲜槐花、胡萝卜、黄豆等为主要原料,制备一款内酯豆腐。以模糊感官评分为评价指标,经单因素和正交试验优化配方,并与5款市售同类型豆腐进行对比,评价产品配方可行性。研究表明,槐花胡萝卜内酯豆腐的最佳工艺:豆水比为1∶8(g/mL)、槐花添加量为8%、葡萄糖酸内酯添加量为0.4%、点浆温度为85 ℃、胡萝卜添加量为30%、凝固时间为20 min,在此条件下制得的豆腐出品率为(280.8±9.6)%,感官评分为89.3。优化后的豆腐口感细腻滑嫩、槐花风味清新自然、色泽柔和均匀。与市售产品相比,槐花胡萝卜内酯豆腐具有较高的持水率[(79.92±2.38)%]和DPPH自由基清除率[(84±2)%]、较低的蒸煮损失率[(1.68±0.41)%]。该豆腐色泽偏红黄色调,部分质构指标与同类型产品差异较小,可作为日常消费的豆制品。
Abstract:In this study,a glucono-δ-lactone (GDL) tofu was prepared using fresh Sophora japonica (a medicinal and edible material),carrots,and soybeans as the main raw materials.The formulation was optimized by single-factor and orthogonal experiments using fuzzy sensory scores as the evaluation index.Additionally,the product was compared with five commercial tofu products to evaluate its feasibility as a daily consumer product.The results showed that the optimal process parameters were as follows:mass ratio of soybean to water of 1∶8 (g/mL),Sophora japonica addition of 8%,GDL addition of 0.4%,curdling temperature of 85 ℃,carrot addition of 30%,and coagulation time of 20 min.Under these conditions,the tofu yield was (280.8±9.6)%,and the sensory score was 89.3.The optimized tofu presented a fine and smooth texture,a fresh and natural Sophora japonica flavor,and a soft and uniform color.Compared with commercial competing products,the developed tofu exhibited higher water-holding capacity [(79.92±2.38)%] and DPPH radical scavenging rate [(84±2)%],as well as a lower cooking loss rate [(1.68±0.41)%].Although the tofu showed a reddish-yellow hue,and some texture indicators were slightly inferior to those of the commercial products,the differences were not significant,confirming its suitability for daily consumption.This research not only provides a scientific basis for the process optimization of GDL tofu but also offers new ideas for the development and application of the medicinal and edible Sophora japonica.
