中文摘要: 植物蛋白肽是重要的生物活性分子,在抗氧化、抗菌等方面作用显著,可清除自由基、抑制病原菌生长、抑制血管紧张素转化酶(angiotensin-converting enzyme,ACE)活性、调节胰岛素分泌,还可通过调控或诱导抗冻蛋白的表达增强植物抗冻能力。该文系统综述植物蛋白肽在抗氧化、抗菌、抗高血压、抗糖尿病及抗冻方面的作用机制,同时探讨其在实际生产生活中的应用与前景,为相关研究提供理论依据与方向。
Abstract:Plant protein peptides are important bioactive molecules with significant effects including antioxidant and antimicrobial activities.They can scavenge free radicals,inhibit the growth of pathogenic bacteria,suppress angiotensin-converting enzyme (ACE) activity,regulate insulin secretion,and enhance plant freezing tolerance by regulating or inducing the expression of antifreeze proteins.This paper systematically reviewed the mechanisms of plant protein peptides in antioxidant,antimicrobial,antihypertensive,antidiabetic and antifreeze activities,and discussed their applications and prospects in practical production and daily life,provided a theoretical basis and direction for related research.
