中文摘要: 我国通常将膳食纤维含量显著高于普通米面果蔬的食品统称为高纤维食品。高纤维食品含有丰富的营养物质,对慢性病防控具有积极作用。目前,我国在高纤维食品的营养与加工特性研究、现代加工工艺的优化以及产品应用方面取得一定进展。但现有研究存在明显分散性,如不同加工工艺的适配性与协同效应未形成统一体系,针对特定人群的营养配方开发尚未规模化推进,纤维保留与产品适口性的平衡技术仍需突破。因此,对高纤维食品营养与加工特性、现代加工工艺和产品应用等方面进行系统综述,可为该领域的技术创新提供理论与实践参考,具有重要的现实意义。
Abstract:In China,the foods with substantially higher dietary fiber content than common staples such as rice,flour,fruits,and vegetables are generally referred to as high-fiber foods.High-fiber foods are rich in nutrients and have positive effects on the prevention and control of chronic diseases.Currently,China has made significant progress in the research on the nutritional and processing characteristics of high-fiber foods,the optimization of modern processing technologies,and the applications of products.However,existing studies remain highly fragmented.The compatibility and synergistic effects of different processing technologies have not been systematically integrated,the development of nutritional formulas for specific populations has not been widely implemented,and techniques for balancing fiber retention and product palatability still require breakthroughs.Therefore,a systematic review of the nutritional and processing characteristics,modern processing technologies,and product applications of high-fiber foods provides theoretical and practical references for technological innovations in this field,which has important practical significance.
