中文摘要: 该文以马蹄全粉替代部分面粉,并用马蹄汁替代水研制一款马蹄风味浓郁且低糖的空气蛋糕。以感官评分和质构特性为指标,采用单因素及正交试验探究马蹄全粉、马蹄汁和白砂糖添加量对马蹄全粉空气蛋糕品质的影响,最终确定其最佳配方及制作工艺。结果表明,马蹄全粉空气蛋糕的最佳添加量配方为蛋糕胚:低筋面粉10.00 g、马蹄全粉3.00 g、马蹄汁10.00 g、白砂糖4.00 g、盐0.15 g、塔塔粉0.45 g、玉米胚芽油4.00 g、鸡蛋1 个;蛋糕馅料:马蹄全粉2.50 g、马蹄汁1.50 g、白砂糖1.00 g、淡奶油5.00 g、鲜马蹄50.00 g。按照该配方制作出的空气蛋糕具有较高的营养价值,并且微生物检验结果均符合相关国家标准。
Abstract:This study aimed to develop a low-sugar air cake with a pronounced water chestnut flavor by substituting part of the wheat flour with water chestnut whole powder and replacing water with water chestnut juice.Using sensory evaluation and texture profile analysis as the evaluation indicators,single-factor and orthogonal experiments were conducted to examine the effects of adding water chestnut whole flour,water chestnut juice and granulated sugar on the quality of water chestnut whole flour air cake.The optimal formulation and processing parameters were subsequently determined.The results showed that the optimal formulation consisted of the following cake base: 10.00 g low gluten flour,3.00 g water chestnut whole flour,10.00 g water chestnut juice,4.00 g granulated sugar,0.15 g salt,0.45 g cream of tartar,4.00 g corn germ oil,and 1 egg;and the following filling: 2.50 g water chestnut whole flour,1.50 g water chestnut juice,1.00 g granulated sugar,5.00 g whipping cream,and 50.00 g fresh water chestnuts.The air cake prepared using this formulation exhibited high nutritional value,and all microbiological test results complied with relevant national standards.
