中文摘要: 霉菌奶酪的脂肪酸组成中不饱和脂肪酸(unsaturated fatty acids,UFAs)含量较低,茶油可以弥补奶酪中UFAs含量低的缺陷。该研究以雅致放射毛霉(Actinomucor elegans)作为发酵剂,并引入茶油作为底物,通过优化发酵工艺开发一种富含UFAs的新型茶油奶酪。结果显示,筛选得到的高产UFAs的A. elegans菌株,其UFAs总含量达28.95%,茶油奶酪与霉菌奶酪相比油酸含量提高1.65%,亚油酸含量提高1.98%。优化后发酵工艺为霉菌接种量0.7%、发酵温度27 ℃、发酵时间7 d、白砂糖添加量2.0%;成熟期茶油奶酪的12%三氯乙酸可溶性氮与酸价动态变化显示蛋白、脂肪水解可控性增强,电子舌检测证实其酸味降低42%、鲜味提升32%,霉菌发酵茶油奶酪(奶酪A)中UFAs含量相较霉菌发酵奶酪(奶酪B)提高了15.95%;奶酪A在成熟期间硬度适度下降,而奶酪B因水分流失而发生质构劣化。
Abstract:Mold-ripened cheese typically contains low levels of unsaturated fatty acids (UFAs),while tea oil can compensate for the deficiency of low UFAs content in cheese. This study developed a novel tea oil-enriched cheese with an improved UFAs profile through optimization of the fermentation process by incorporating Actinomucor elegans as a starter culture and tea oil as a lipid substrate. The results showed that the A. elegans strain screened for high UFAs production achieved a total UFAs content of 28.95%. Compared to mold-ripened cheese,tea oil cheese exhibited an increase in oleic acid content by 1.65% and linoleic acid content by 1.98%. Through process optimization,the following parameters were established: mold inoculum size of 0.7%,fermentation at 27 ℃ for 7 d,and white granulated sugar addition of 2.0%. During ripening,the tea oil cheese (Cheese A) exhibited enhanced controllability of protein and fat hydrolysis,as indicated by the dynamics of 12% trichloroacetic acid-soluble nitrogen and acid value. Electronic tongue analysis confirmed a favorable flavor profile,with a 42% reduction in sourness and a 32% enhancement in umami. Notably,the UFAs content in Cheese A was 15.95% higher than that in the conventional mold-fermented cheese (Cheese B). Furthermore,Cheese A showed a desirable moderate decrease in hardness during ripening,while Cheese B deteriorated due to moisture loss.
