中文摘要: 采用自然干燥(natural drying,ND)、热风干燥(hot air drying,HAD)及弱微波辅助干热空气干燥(dry hot air drying assisted by weak microwaves,WHAD)技术对杏-玫瑰花酱复合果丹皮进行干燥,比较不同干燥方式对复合果丹皮理化性质、活性成分及抗氧化活性的影响,从中优选出适用于复合果丹皮的干燥方式。结果表明,WHAD最佳工艺参数为热风5 min、微波3.0min、厚度3.0mm;在WHAD干燥方式下,复合果丹皮的干燥速率为15.47 g/(g·min),ΔE值为14.68,整体色泽保持较好,可溶性糖含量为12.38 g/100 g,总酸含量为3.83 g/100 g,硬度为5 512.75 g,黏性为1 848.09 g,咀嚼性为1 179.94mJ,感官评分为89,VC含量为3.91 mg/100g,总酚含量为4.96g/100g,抗氧化活性最强(DPPH自由基清除率为88.67%,ABTS+自由基清除率为85.75%,总还原能力为20.94,FRAP为52.95 μmol/100 g)。WHAD技术与ND、HAD技术相比,可以有效保留产品的理化性质、活性成分并提高抗氧化活性,更适用于复合果丹皮的干燥。

Abstract:Natural drying (ND),hot air drying (HAD),and dry hot air drying assisted by weak microwaves(WHAD) were used to dry the composite sweetened roll made from apricot and rose paste. The effects of different drying methods on the physicochemical properties,active components and antioxidant activity of the composite sweetened roll were compared,and the drying method suitable for the composite sweetened roll was selected. The results showed that the optimal process parameters for WHAD were 5 minutes of hot air treatment,3.0 minutes of microwave exposure,and a sample thickness of 3.0 mm. Under the WHAD drying method,the drying rate of the composite sweetened roll was 15.47 g/(g·min),the ΔE value was 14.68,indicating well maintained overall color,with the soluble sugar content at 12.38 g/100g,the total acid content at3.83 g/100g,and the hardness at 5 512.75 g. The viscosity was 1 848.09 g,the chewiness was 1 179.94 mJ,and the sensory score achieved 89. Additionally,the VC content was 3.91 mg/100g,the total phenol content was 4.96 g/100g,and the antioxidant activity was the strongest among the tested methods,with a DPPH free radical scavenging rate of 88.67%,ABTS+free radical scavenging rate of 85.75%,total reducing capacity of 20.94 and FRAP value of 52.95 μmol/100 g. Therefore,compared with ND and HAD technologies,WHAD technology effectively retains the physicochemical properties and active components of the product while enhancing its antioxidant activity,makingit suitable for the drying of composite sweetened roll.
