中文摘要: 以紫薯为研究对象,采用抗坏血酸和L-半胱氨酸分别对紫薯进行保鲜处理,通过测定褐变度、多酚氧化酶(polyphenol oxidase,PPO)活性、过氧化物酶(peroxidase,POD)活性、硬度、失重率、可溶性固形物含量探究紫薯贮藏过程中品质和抗氧化活性的变化。结果表明,抗坏血酸和L-半胱氨酸保鲜处理可有效抑制紫薯PPO活性、POD活性、降低褐变的积累、减少紫薯质量的损失、维持可溶性固形物含量并且保持紫薯的品质。其中,0.1%L-半胱氨酸处理组的色泽更加鲜亮、褐变程度较轻、质地偏硬,具有较好的保鲜效果。
Abstract:Ascorbic acid and L-cysteine were applied in the fresh-keeping treatments for purple sweet potatoes. Changes in quality attributes and antioxidant activity of purple sweet potatoes during storage were evaluated by determining browning index,polyphenol oxidase (PPO) activity,peroxidase (POD) activity,firmness,weight loss rate,and soluble solids content. The results showed that both ascorbic acid and L-cysteine treatments effectively inhibited PPO and POD activities,reduced browning rate,decreased weight loss,maintained soluble solids content,and preserved the texture of purple sweet potatoes. Among the treatments,the 0.1% L-cysteine treatment exhibited brighter color,lower browning degree,and firmer texture,indicating superior preservation effects.
