中文摘要: 为提升低血糖生成指数(glycemic index,GI)杂粮挂面的食用品质,该试验考察3种辅料(谷朊粉、菊粉、魔芋粉)对杂粮挂面感官品质、质构特性和微观结构的影响,并计算杂粮挂面坚实度、吸水率和感官评价的综合评分,通过响应面分析确定挂面最佳配方。结果表明:最佳配方为谷朊粉添加量17.5%、菊粉添加量1.39%、魔芋粉添加量0.54%、马铃薯淀粉添加量12.5%、葛根粉添加量9%、山药粉添加量11%、荞麦精粉添加量48.07%,该条件下所得杂粮挂面整体品质最佳,综合评分为98.5。合理添加3种辅料可提高杂粮挂面品质,改善杂粮挂面微观结构,明显提升其食用品质。
Abstract:To enhance the eating quality of low-glycemic index(GI) compound cereal noodles,the effects of three auxiliary ingredients (vital wheat gluten,inulin,and konjac flour) on the sensory quality,textural properties,and microstructure of the noodles were investigated. The firmness,water absorption rate,and comprehensive sensory score of the noodles were determined. The formulation was optimized by response surface methodology. The results showed that the optimal formulation consisted of vital wheat gluten of 17.5%,inulin of 1.39%,konjac flour of 0.54%,potato starch of 12.5%,kudzu root powder of 9%,yam powder of 11%,and refined buckwheat flour of 48.07%. Under these optimized conditions,the overall quality of the compound cereal noodles was the best,with a comprehensive score of 98.5. Reasonable addition of these three auxiliary ingredients improved the noodle quality and microstructure and notably enhanced the eating quality.
