中文摘要: 为探讨葡萄亲本与后代品种间贮藏特性的差异,该研究以阳光玫瑰(YGMG)、瑞都红玫(RDHM)及其杂交后代桂葡14号(GP14)、桂葡15号(GP15)为原料,采用质构剖面分析和整果穿刺法,结合理化指标对贮藏过程中质构变化进行分析。结果表明,贮藏初期品种间质构差异明显,YGMG的硬度、咀嚼性、胶黏性和弹性最高,内聚性较低;RDHM除黏附性较高外,其他各项指标均最低;GP14和GP15介于两者之间。贮藏期内随时间延长所有品种的硬度、咀嚼性、弹性和果皮强度均呈现下降趋势,其中YGMG硬度降幅最小,GP14降幅最大;内聚性呈上升趋势,GP14增幅达26.19%,而YGMG仅为2.33%。果皮韧性波动较大,第50天的GP15增幅最大(11.14%),YGMG最稳定(4.30%)。相关性结果表明,果实硬度与咀嚼性、胶黏性等质构指标高度正相关,总糖含量和可溶性固形物含量与弹性、果皮强度、咀嚼性呈正相关。综合评价表明,YGMG耐贮性最佳,适宜长期储存;RDHM适于中短期,GP14和GP15则适宜短期贮藏。
Abstract:The storage characteristics were compared between grape parents and their hybrid offspring. ′Sunlight Muscat′ (YGMG),′Ruidu Hongmei′ (RDHM),and their hybrids ′Guipu 14′ (GP14) and ′Guipu 15′(GP15) were selected as materials. Texture profile analysis (TPA) and the whole-fruit puncture method were employed in conjunction with physicochemical indicators to assess changes in fruit texture during storage. The results showed that at the beginning of storage,texture characteristics presented significant differences among varieties. YGMG had the highest hardness,chewiness,gumminess,and elasticity and the lowest cohesiveness. RDHM had the highest adhesion while the lowest other indicators. GP14 and GP15 showed intermediate characteristics. During the storage period,as storage time increased,fruit firmness,chewiness,springiness,and peel strength in all cultivars showed a decreasing trend,with YGMG displaying the least reduction in hardness and GP14 the greatest. Cohesiveness increased over time,with GP14 showing the highest rise (26.19%)and YGMG the smallest (2.33%). Resilience fluctuated markedly during storage. On day 50,GP15 exhibited the greatest increase (11.14%),whereas YGMG was the most stable (4.30%). Correlation analysis showed that fruit firmness was highly positively correlated with chewiness,gumminess,and other texture parameters.In addition,total sugars and total soluble solids were positively correlated with springiness,peel strength,and chewiness. Comprehensive evaluation indicated that YGMG possessed the strongest storability and was wellsuited for long-term storage. RDHM was better suited for medium-term storage,whereas GP14 and GP15 were more appropriate for short-term storage.
