中文摘要: 稻谷储备是国家粮食安全的重要保障。稻谷作为人们主要的碳水化合物来源之一,其成分富含矿物质和维生素等多种营养素,但储藏过程中发生的持续呼吸作用、酶促反应及非酶褐变等生化过程,易导致营养成分流失与品质劣变。以气调储藏(O2/CO2浓度调控)和非热物理杀菌技术(如超高压、辐照)为代表的绿色储粮技术,能够有效降低稻谷营养成分的损失,为维持稻谷营养组分稳定性及食味品质提供新的技术解决方案。该文综述近年来稻谷储藏技术的研究进展,系统阐明不同储藏方式对稻谷营养素(淀粉、蛋白质、脂质)及活性物质的作用机制及影响,以期为发展多形式协同储粮技术及智能化仓储体系提供理论支撑与实践指导。
Abstract:Rice reserves are of vital importance to national food security.However,during the storage process,rice is prone to nutrient loss and quality deterioration.Traditional storage methods have many drawbacks.Against this backdrop,green grain storage technology has emerged as a new solution to the problem of rice storage.This article focuses on rice storage techniques and provides a comprehensive review of different storage technologies.Green grain storage technologies represented by controlled atmosphere storage(O2/CO2 concentration regulation)and non-thermal physical sterilization techniques(such as ultra-high pressure and irradiation)can effectively reduce the loss of nutrients in rice,providing a new solution for maintaining the nutritional components and taste quality of rice.This article summarizes the research progress of rice storage technology,with the aim of providing theoretical support and practical guidance for the development of multi-form collaborative grain storage technologies and intelligent warehousing systems.
