木薯种子的营养成分分析及评价

中文摘要: 为合理开发利用木薯种子,以木薯种子为材料,对其粗蛋白、粗脂肪、淀粉含量和氨基酸、脂肪酸、矿物质元素组成及含量进行分析。结果表明,木薯种子中粗蛋白、粗脂肪、淀粉含量分别为17.69%、27.37%和0.37%;木薯种子中共检出20种氨基酸,其中8种必需氨基酸(essential amino acid,EAA)占总氨基酸(total amino acid,TAA)含量的37.11%,必需氨基酸与非必需氨基酸(non-essential amino acid,NEAA)的比值为59.02%,接近联合国粮食及农业组织和世界卫生组织(Food and Agriculture Organization/World Health Organization,FAO/WHO)推荐的理想蛋白质模式(EAA占TAA的40%左右,EAA占NEAA的60%以上)。木薯种子中检出25种脂肪酸,其中饱和脂肪酸16种,含量为10.81 mg/g,不饱和脂肪酸9种,含量为29.27 mg/g,3种含量最高的脂肪酸分别为亚油酸(18.70 mg/g)、棕榈酸(6.99 mg/g)和油酸(5.43 mg/g)。木薯种子中检测到21种矿物质元素,常量元素和微量元素中含量最高的分别为Mg和Mn,含量分别为7 220.05 mg/kg和1 230.02 mg/kg。综上,木薯种子中具有较高含量的粗脂肪,氨基酸组成全面,不饱和脂肪酸含量较高,矿物质元素丰富,极具开发利用价值。
Abstract:For the rational development and utilization of cassava seeds,the content of crude protein,crude fat,and starch,as well as the composition and content of amino acids,fatty acids,and mineral elements,in cassava seeds was analyzed.The results showed that the content of crude protein,crude fat,and starch in cassava seeds was 17.69%,27.37%,and 0.37%,respectively. A total of 20 amino acids were detected in cassava seeds,among which 8 essential amino acids(EAAs)accounted for 37.11% of the total amino acids(TAAs),and the ratio of EAAs to non-essential amino acids(NEAAs)was 59.02%,which was close to the ideal protein pattern(EAAs constituting approximately 40% of TAAs and exceeding 60% of NEAAs)recommended by the Food and Agriculture Organization/World Health Organization(FAO/WHO). A total of 25 fatty acids were detected in cassava seeds,including 16 saturated fatty acids and 9 unsaturated fatty acids,the content of which was 10.81 mg/g and 29.27 mg/g,respectively.The three most abundant fatty acids were linoleic acid(18.70 mg/g),palmitic acid(6.99 mg/g),and oleic acid(5.43 mg/g).Twenty-one mineral elements were detected in cassava seeds,and the macroelement and microelement with the highest content were Mg and Mn,which showed the content of 7 220.05 mg/kg and 1 230.02 mg/kg,respectively. In conclusion,cassava seeds demonstrated great development and utilization value for their high content of crude fat,comprehensive amino acid composition,high content of unsaturated fatty acids,and rich mineral elements.
