中文摘要: 为降低麻薯面包的血糖生成指数(glycemic index,GI),在单因素试验基础上,以麻薯面包的感官评分作为评价指标,并应用响应面法对原始配方进行工艺优化,得到麻薯面包最佳工艺参数为高直链玉米淀粉添加量5 g、赤藓糖醇添加量20 g、烘焙温度170 ℃、牛奶添加量148 g、蛋液添加量46 g、烘焙时间35 min,此条件下得到的低GI麻薯面包感官评分为90.5,预估血数生成指数(estimated glycemic index,eGI)值为48.11。
Abstract:To reduce the glycemic index(GI)of mochi bread,based on single-factor experiments,sensory evaluation scores were used as the assessment metric.Response surface methodology was applied to optimize the original recipe,yielding the following optimal process parameters:high-amylose corn starch content of 50 g,20 g of erythritol,a baking temperature of 170 ℃,148 g of milk,46 g of egg liquid,and a baking time of 35 minutes.Under these conditions,the low-GI mochi bread achieved a sensory score of 90.5 and a estimated glycemic index(eGI)value of 48.11.
