中文摘要: 该研究以新疆罗布麻茶和蜂蜜为原料发酵制备罗布麻茶蜂蜜酒,探讨酵母接种量、料液比、浸提温度和初始糖浓度对罗布麻茶蜂蜜酒酿制的影响,采用单因素和响应面试验方法,以感官评分为指标,优化罗布麻茶蜂蜜酒最佳酿制条件。结果表明:酵母接种量为0.4 g/L、料液比为1∶70(g/mL)、初始糖浓度为18 °Brix、茶叶浸提温度为80 ℃时,酿制的罗布麻茶蜂蜜酒品质最佳,此时罗布麻茶蜂蜜酒的酒精度为9.2%vol,可溶性固形物含量为3.5°Brix,茶多酚含量为1.58 g/L,总酸含量为4.38 g/L,感官评分为91.6。

Abstract:A fermented Apocynum venetum honey wine was developed with A.venetum tea from Xinjiang and honey as raw materials.The effects of key fermentation parameters—yeast inoculation amount,solid-liquid ratio,tea extraction temperature,and initial sugar concentration—on the quality of the final product were investigated.Single-factor experiments and response surface methodology were employed to optimize the process conditions with the sensory score serving as the primary evaluation index.The results demonstrated that the optimal parameters were as follows:yeast inoculation of 0.4 g/L,solid-liquid ratio of 1∶70(g/mL),initial sugar concentration of 18 °Brix,and tea extraction temperature of 80 ℃.Under these optimized conditions,the produced Apocynum venetum tea honey wine exhibited the best quality,characterized by the alcohol content of 9.2% vol,soluble solids content of 3.5°Brix,tea polyphenol content of 1.58 g/L,total acid content of 4.38 g/L,and the sensory score of 91.6.
