中文摘要: 为深入把握浓香型白酒窖泥的研究现状与热点,该文基于Web of Science核心合集和中国知网,采用文献计量方法,对1980年~2024年共481篇中文文献和86篇英文文献进行知识图谱分析,从年度发文量、作者与机构、高被引文献及关键词等维度系统梳理窖泥研究进展,并探讨未来发展趋势。结果显示,近十年窖泥研究显著增长,相关研究对提升浓香型白酒品质和促进产业高质量发展具有关键作用。黄治国、罗惠波、张宿义、张文学等国内学者在该领域贡献突出,形成了较具影响力的研究团队,研究主要集中于窖泥、人工窖泥、己酸菌及窖泥微生物群落结构等方向。该文的综合分析可为行业研究者把握窖泥研究动态、明确未来方向及促进科研合作提供重要参考。

Abstract:n order to gain a deeper understanding of the current research status and hot topics in strong-flavor Baijiu cellar mud,this paper used bibliometric methods based on the Web of Science Core Collection and China National Knowledge Infrastructure to conduct a knowledge graph analysis of 481 Chinese and 86 English publications from 1980 to 2024.The research systematically reviewed the progress of cellar mud research from dimensions such as annual publication volume,authors and institutions,highly cited literature,and keywords and discussed future development trends.The results showed that cellar mud research has increased significantly in the past decade,and related research played a crucial role in improving the quality of strong-flavor Baijiu and promoting the high-quality development of the industry.Chinese scholars such as Huang Zhiguo,Luo Huibo,Zhang Suyi,and Zhang Wenxue have made outstanding contributions in this field,forming influential research teams.Their research mainly focused on cellar mud,artificial cellar mud,hexanoic acid bacteria,and the microbial community structure of cellar mud.This comprehensive analysis could provide important reference for industry researchers to grasp the dynamics of cellar mud research,clarify future directions,and promote scientific research cooperation.
