狼山鸡鸡肉品质特性分析

中文摘要: 该文对狼山鸡的屠宰性能、肉品质及风味组分进行检测分析,挖掘其品质特征,筛选其特质性指标。随机选择17周龄狼山鸡24只,公母各半,以6周龄AA肉鸡为对照。采集胸肌组织,用于质构特性、常规品质、营养品质和风味物质的测定。结果 显示,狼山鸡的公鸡宰前活重显著高于母鸡(P<0.05),母鸡腹脂率显著高于公鸡(P<0.05),而屠宰率、半净膛率、全净膛率、胸肌率、腿肌率均无显著差异(P>0.05)。质构特性分析显示,狼山鸡鸡肉弹性和咀嚼性显著低于AA肉鸡(P<0.05)。常规品质分析显示,狼山鸡鸡肉的红度值(ɑ*值)和系水力显著高于AA肉鸡(P<0.05),而黄度值(b*值)和剪切力显著低于AA肉鸡(P<0.05)。营养品质分析显示,狼山鸡的蛋白质、肌内脂肪、肌苷酸、肌肽、鹅肌肽、总氨基酸、呈味氨基酸以及天冬氨酸+谷氨酸含量均显著高于AA肉鸡(P<0.05),而牛磺酸含量显著低于AA肉鸡(P<0.05)。风味物质分析显示,狼山鸡与AA肉鸡的风味化合物存在明显差异。结果表明,肉色、蛋白质、肌肽、鹅肌肽、肌内脂肪、肌苷酸(inosine monphosphate, IMP)、总氨基酸、呈味氨基酸和天冬氨酸+谷氨酸含量等指标可作为狼山鸡的候选特质性成分。
Abstract:This study examined and analyzed the slaughter performance, meat quality, and flavor compounds of Langshan chickens, aiming to explore the key quality characteristics and identify the characteristic indicators. Twenty-four 17-week-old Langshan chickens, half male and half female, were randomly sampled, with 6-week-old AA broilers serving as the controls. Breast muscle tissues were collected for assessments of textural characteristics, conventional quality indices, nutritional quality, and flavor-related compounds. The results showed that the pre-slaughter live weight of male chickens was significantly higher than that of females (P<0.05), while the abdominal fat percentage of females was significantly higher than that of males(P<0.05). No significant differences were observed in slaughter rate, semi-clean body rate, full clean body rate, pectoral muscle rate, or leg muscle rate between the two groups (P>0.05). Textural characteristic analysis indicated that Langshan chickens exhibited significantly lower elasticity and chewiness compared to AA broilers (P<0.05). Conventional quality assessments revealed that Langshan chickens had significantly higher redness(ɑ*) and water-holding capacity, while showing significantly lower yellowness (b*) and shear force values than AA broilers (P<0.05). Nutritional quality analysis demonstrated that Langshan chickens contained significantly higher levels of proteins, intramuscular fat, inosine monophosphate (IMP), carnosine, anserine,total amino acids, flavor-enhancing amino acids, aspartic acid, and glutamic acid compared to AA broilers (P<0.05). Conversely, the tannic acid content was significantly lower in Langshan chickens (P<0.05). Flavor compound analysis further identified significant differences between Langshan chickens and AA broilers.These findings suggest that indicators such as meat color, protein content, carnosine, anserine, intramuscular fat, IMP, total amino acids, flavor-enhancing amino acids, and the combined levels of aspartic acid and glutamic acid can serve as candidate characteristic components for Langshan chickens.
