中文摘要: 魔芋葡甘聚糖(konjac glucomannan,KGM)和淀粉是两种常见的食品胶体,它们之间的协同作用可以显著提高凝胶强度。为探讨不同种类食用胶(卡拉胶、黄原胶、瓜尔胶、可得然胶)对KGM/淀粉共混凝胶强度的作用特性,通过质构分析、色差仪、流变学测试、感官评定等手段,系统研究不同食用胶对KGM/淀粉共混凝胶的凝胶强度、弹性、持水性等特性的影响。结果 表明,食用胶在共混体系中添加量为0.3%时,黄原胶对共混凝胶的凝胶强度影响较显著,对色泽影响较小,更有利于改善共混凝胶的感官性状。
Abstract:Konjac glucomannan (KGM) and starch are two common food colloids, and their synergistic interaction can significantly enhance gel strength. This study investigated the effects of different types of edible gums (such as carrageenan, xanthan gum, guar gum, and curdlan gum) on the strength of KGM/starch composite gels. Through texture analysis, colorimetry, rheological testing, and sensory evaluation, the study systematically examined the influence of various edible gums on the strength, elasticity, water-holding capacity, and other properties of KGM/starch composite gels. The results indicated that when the addition level of edible gums in the composite system was 0.3%, xanthan gum had a more pronounced effect on gel strength while minimally affecting color, making it more favorable for improving the sensory characteristics of the composite gel.
