中文摘要: 为开发营养全面、口感更佳的奶酪制品,通过在奶酪中添加沙棘粉并利用冷冻干燥技术提升奶酪品质。该研究以奶酪感官评分为标准,在单因素试验基础上,结合响应面优化沙棘粉、麦芽糊精、乳酸钙和复合胶(卡拉胶、果胶、刺槐豆胶)的添加量,在冷冻干燥技术条件下干燥,并对冻干沙棘奶酪产品的品质进行分析。结果表明,冻干沙棘奶酪的最佳配方为沙棘粉添加量11.23%、麦芽糊精添加量5.06%、乳酸钙添加量0.23%、复合胶(卡拉胶、果胶、刺槐豆胶质量比为1∶2∶1)添加量0.40%,此配方制备的冻干沙棘奶酪感官评分较高,为91.32,且冻干沙棘奶酪组织均匀,具有奶酪特有的香味,同时融合沙棘果的独特风味。品质指标结果表明,冻干沙棘奶酪中水分含量为11.2 g/100 g,脂肪含量为31.5 g/100 g,硬度为631.809 g,pH值为4.86。顶空固相微萃取气相质谱(headspace solid phase microextraction gas chromatography-mass spectrometry,HS-SPME-GC-MS)联用技术结果表明,冻干沙棘奶酪中主要的挥发性风味物质是酯类物质,其中含量最高的酯类物质为异戊酸异戊酯。冻干沙棘奶酪检测出的菌落总数符合GB 25192—2022《食品安全国家标准 再制干酪和干酪制品》要求(菌落总数<1 000 CFU/g),且富含乳酸菌。
Abstract:To develop a cheese product with comprehensive nutrition and improved taste,sea-buckthorn powder was added to cheese,and freeze-drying technology was employed to enhance product quality.Based on comprehensive sensory scores,single-factor experiments combined with response surface methodology were employed to optimize the addition levels of sea-buckthorn powder,maltodextrin,calcium lactate,and a composite gum (consisting of carrageenan,pectin,and locust bean gum).The cheese was then freeze-dried,and the quality of the resulting freeze-dried sea-buckthorn cheese was analyzed.The results showed that the optimal formulation consisted of 11.23% sea-buckthorn powder,5.06% maltodextrin,0.23% calcium lactate,and 0.40% composite gum(the mass ratio of carrageenan,pectin,and locust bean gum was 1∶2∶1).The freeze-dried seabuckthorn cheese produced with this formula achieved the highest sensory score of 91.32.The product exhibited a uniform texture,the characteristic aroma of cheese,and an integrated unique flavor of sea-buckthorn fruit.Quality analysis revealed that the moisture content of the freeze-dried sea-buckthorn cheese was 11.2 g/100 g,the fat content was 31.5 g/100 g,the hardness was 631.809 g,and the pH was 4.86.Headspace solidphase microextraction gas chromatography-mass spectrometry (HS-SPME-GC-MS) analysis showed that the main volatile flavor compounds in the product were esters,with isoamyl isovalerate being the most abundant.The total colony count met the national food standard processed cheese and cheese products:GB 25192—2022(total colony count<1 000 CFU/g),and the product was rich in lactic acid bacteria.
