中文摘要: 该文选用大麦芽与小麦芽为原料,采用Munich classic酵母、SafAleW-68酵母及“神舟九号”搭载后的太空酵母303酿造德式小麦啤酒,旨在对比3种酵母的发酵效能及其对啤酒理化指标的影响,并进行感官评价。结果表明,Munich classic酵母与SafAleW-68酵母在降糖和酒精生成方面表现相近,但SafAleW-68酵母在双乙酰还原上表现更优,能明显降低其含量。太空酵母303虽然起始发酵速度较慢,但发酵过程稳定,最终酒精度达到5.08% vol。在理化指标方面,SafAleW-68酵母酿造的啤酒色度和浊度较高,赋予其独特的外观;而太空酵母303酿造的啤酒苦味较重,pH值较高,风味浓郁。感官评分结果显示,太空酵母303酿造的啤酒在外观、泡沫、香气及口感上均获得较高分,所发酵啤酒泡沫细腻、酯香显著,风味协调独特。
Abstract:This study utilized barley malt and wheat malt as raw materials to brew German-style wheat beer using Munich classic,SafAleW-68 dry yeast,and the space-mutated yeast 303 carried aboard the ′Shenzhou-9′spacecraft.The objective was to compare the fermentation performance of these three yeasts and their influence on the physicochemical indicators of the beer,alongside conducting sensory evaluations.The results indicated that Munich classic and SafAleW-68 exhibited similar performance in terms of sugar reduction and alcohol production.However,SafAleW-68 demonstrated superior diacetyl reduction capability,significantly reducing its content.Although the space-mutated yeast 303 showed a slower initial fermentation rate,the process remained stable,ultimately achieving an alcohol content of 5.08% vol.Regarding physicochemical properties,beer brewed with SafAleW-68 displayed higher color intensity and turbidity,contributing to a distinctive appearance.In contrast,beer fermented with the space-mutated yeast 303 exhibited stronger bitterness,a higher pH,and a more robust flavor profile.Sensory evaluation results revealed that beer produced with the space-mutated yeast 303 received high scores in appearance,foam,aroma,and taste,characterized by fine foam,a notable ester aroma,and a well-balanced,unique flavor.
