中文摘要: 为探究高温高湿气体射流冲击(high-humidity air impingement,HHAI)对刺梨粉品质的影响,该研究测定HHAI不同处理时间(0、30、90、150、210 s)下刺梨粉的水分含量、色差、总多酚含量、总黄酮含量、抗氧化活性、堆积密度及微观结构等理化特性。结果表明,随HHAI处理时间延长,刺梨粉色差逐渐增大,L*值逐渐降低,a*值升高,b*值呈先升后降趋势。吸湿率和结块度随处理时间延长而增加;水分含量始终低于5%,利于产品储存。处理30 s时,刺梨粉表现出最佳品质特性:总多酚含量最高(73.29 mg/g),抗氧化活性最强(ABTS+自由基清除率为50.81%、DPPH自由基清除率为88.92%),持水性(8.02 g/g)和持油性(2.04 mL/g)最优,冲调性能良好。综上,短时(30 s)HHAI处理可明显提升刺梨粉的抗氧化活性,同时保持其优良的理化性能和热稳定性,具有良好的应用潜力。

Abstract:To investigate the effects of high-humidity air impingement (HHAI) on the quality of Rosa roxburghii Tratt.powder (RRTP),this study measured the moisture content,color difference,total phenols,total flavonoids,antioxidant activity,bulk density,microstructure,and other physiochemical properties of RRTP at different HHAI treatment times (0,30,90,150,and 210 s).The results showed that as the HHAI treatment time was increased,the color difference of RRTP was gradually increased,the L* value was gradually decreased,the a* value was increased,and the b* value was in an increasing to decreasing trend.The hygroscopicity and caking degree were also increased.The moisture content was below 5%,conducive to product storage.At 30 s of treatment,RRTP exhibited the best quality characteristics:a total phenol content of 73.29 mg/g,an ABTS+ free radical scavenging rate of 50.81%,a DPPH free radical scavenging rate of 88.92%,a water retention of 8.02 g/g,and an oil retention of 2.04 mL/g,with ideal blending performance.In conclusion,short-term(30 s) HHAI treatment could significantly enhance the antioxidant activity of the RRTP,while maintaining its excellent physicochemical properties and thermal stability,exhibiting ideal application potential.
