中文摘要: 冷鲜猪肉因其优越的营养价值和新鲜口感而受到消费者的喜爱。然而,冷鲜猪肉在贮藏过程中会因环境中的微生物和一系列生化反应而损害其安全性和可食性。该文研究4 ℃贮藏条件下冷鲜猪肉关键品质参数的动态演化规律。结果表明:猪肉在贮藏过程中品质逐渐衰退,失水、变色,紫外荧光响应从第7天明显增强,色差值(ΔE)在第8天为3.97,达到视觉可识别阈值(ΔE>3.0)。电子鼻传感器阵列在第7天检测到特征性胺类物质信号跃变,证实风味品质早期劣化。关键安全指标呈现规律性突破:菌落总数(total viable count,TVC)和硫代巴比妥酸反应物(thiobarbituric acid reactive substances,TBARS)值在贮藏第7天分别达6.17 lg(CFU/g)和0.512 mg/kg,挥发性盐基氮(total volatile basic nitrogen,TVB-N)含量在贮藏第7天达到20.16 mg/100 g,超过标准限定值(15 mg/100 g),pH值于贮藏第8天达到临界限值(6.2)。综上,冷鲜猪肉在4 ℃贮藏下的货架期不超过7 d。
Abstract:Chilled pork is favored by consumers due to its superior nutritional value and fresh taste.However,the safety and edibility of chilled pork can be compromised during storage due to microorganisms in the environment and a series of biochemical reactions.This study investigated the dynamic evolution of key quality parameters of chilled pork stored at 4 ℃.The results showed that the quality of pork deteriorated gradually during storage,with water loss and color change.The ultraviolet fluorescence response increased significantly from the 7th day,and the color difference value (ΔE) reached the visually recognizable threshold (ΔE>3.0) of 3.97 on the 8th day.The electronic nose sensor array detected a characteristic amine signal jump on the 7th day,confirming early deterioration of flavor quality.Key safety indicators showed regular breakthroughs:The total viable count (TVC) and thiobarbituric acid reactive substances(TBARS) values reached 6.17 lg CFU/g and 0.512 mg/kg respectively on the 7th day.The total volatile basic nitrogen (TVB-N) reached 20.16 mg/100 g on the 7th day of storage,exceeding the critical limit (15 mg/100 g).The pH exceeding the critical limit (6.2)on the 8th day.Overall,the shelf life of chilled pork stored at 4 ℃ was less than 7 days.
