中文摘要: 乳酸菌细菌素是乳酸菌代谢产生的一种具有抑菌活性的蛋白质或多肽,能够有效抑制多种病原微生物的生长。随着消费者对绿色、健康、安全食品的需求不断增加,生物源防腐保鲜剂的开发价值日益提升,乳酸菌及其代谢产物以绿色、安全、可生物降解的特性而受到广泛关注。该文主要对乳酸菌细菌素的分类、作用方式、合成机制、纯化技术以及细菌素在食品保鲜的应用进行综述,总结I类、Ⅱ类、Ⅲ类细菌素的抑菌机制,并以乳酸链球菌素(nisin)为例,系统阐释细菌素的合成调控机制,并对乳酸菌及细菌素未来的研究方向进行展望,以期为乳酸菌在食品、医药、农业等领域的开发和应用提供科学依据。
Abstract:Bacteriocins derived from lactic acid bacteria are proteins or polypeptides with antibacterial activity produced during their metabolic processes, which can effectively impede the growth of a multitude of pathogenic microorganisms. In tandem with the ever-increasing consumer demands for green, healthy, and safe food, the developmental value of bio-based preservation technologies has been progressively augmenting. Lactic acid bacteria and their metabolites have attracted widespread attention on account of their natural, safe,and biodegradable properties. A comprehensive review of bacteriocins from lactic acid bacteria was conducted regarding the classification, modes of action, synthesis mechanisms, purification techniques, and applications in food preservation. The antibacterial mechanisms of class I, class II, and class Ⅲ bacteriocins were summarized. With nisin as an illustrative example, the synthesis and regulation mechanisms of bacteriocins were systematically explicated. Additionally, the future research directions on lactic acid bacteria and bacteriocins were outlined. The findings were expected to furnish a scientific basis for the development and application of lactic acid bacteria in the fields of food, medicine, agriculture, and so on.
