中文摘要: 淡水鱼的保鲜技术一直是水产领域的研究热点。生物保鲜剂相较于传统的保鲜剂安全性更高、更环保,有望取代传统化学保鲜剂。但目前大多数生物保鲜剂仍存在生产成本较高、保鲜效果欠佳的问题,亟待进一步解决。该文综述淡水鱼生物保鲜剂的研究进展,并阐述多糖类、多酚类、蛋白质类、植物精油类生物保鲜剂在淡水鱼保鲜中的原理及应用,为淡水鱼保鲜技术进一步开发提供理论参考。

Abstract:The preservation technology of freshwater fish has always been a research hotspot in aquaculture.Biopreservatives, being safer and more environmentally friendly than conventional preservatives, are expected to replace chemical preservatives. However, many biopreservatives currently still have problems such as high production costs and less-than-ideal preservation effects, which urgently need to be further resolved. The research progress in biopreservatives for freshwater fish was reviewed and the principles and applications of polysaccharide, polyphenol, protein, and plant essential oil-based biopreservatives in the preservation of freshwater fish were detailed, providing theoretical references for the further development of freshwater fish preservation technologies.
