中文摘要: 空肠弯曲菌是一种在鸡肉加工过程中不容忽视的食源性致病菌。微酸性电解水(slightly acidic electrolyzed water, SAEW)杀菌是一种近年来在食品加工领域广泛应用的广谱、高效、安全的非热杀菌技术。该研究以人工污染空肠弯曲菌的鸡肉模型为研究对象,采用不同有效氯浓度的SAEW对研究对象进行不同时间的灭菌处理,探究SAEW对鸡肉表面空肠弯曲菌的杀灭效果;同时,对经SAEW处理的鸡肉样品进行质地、感官品质、储存期间空肠弯曲菌的生长情况、pH值和色泽等方面的检测,以确定SAEW处理的鸡肉在保藏期间品质的变化。研究结果表明,SAEW能够有效杀灭鸡肉样品表面的空肠弯曲菌,其杀菌效果明显优于相同有效氯浓度的次氯酸钠溶液;与无菌去离子水和相同有效氯浓度的次氯酸钠溶液相比,SAEW在1 min内的杀菌效率最高,使空肠弯曲菌数量减少1.69 lg (CFU/mL);且有效氯浓度为50 mg/L的SAEW对鸡肉样品进行处理不会对其后续保藏期间的品质产生不良影响。
Abstract:Campylobacter jejuni is a foodborne pathogen of significant concern in chicken processing. Slightly acidic electrolyzed water (SAEW) has gained widespread application in the food industry as a broad-spectrum, efficient, and safe non-thermal sterilization technology. The artificially contaminated chicken model was used to evaluate the bactericidal effects of SAEW with different available chlorine concentrations against C. jejuni over varying treatment time periods. The texture, sensory attributes, microbial growth during storage, pH,and color of SAEW-treated chicken samples were evaluated to determine the impact of SAEW on chicken quality during storage. The results demonstrated that SAEW effectively inactivated C. jejuni on chicken surfaces,exhibiting significantly superior bactericidal efficacy to sodium hypochlorite solution at the same available chlorine concentration. Within 1 minute of treatment, SAEW achieved the highest reduction 1.69 lg(CFU/mL)in C. jejuni count, outperforming both sterile deionized water and sodium hypochlorite solution. Moreover, the treatment with SAEW at an available chlorine concentration of 50 mg/L did not adversely affect the quality of chicken during storage.
