中文摘要: 为探讨不同初始状态(贮藏前呈现鲜活、半活和死亡状态)的三疣梭子蟹在冻藏过程中腹部肌肉、螯足肌肉和肝胰腺的品质变化情况。在-20 ℃冻藏过程中,以鲜活状态、半活状态和死亡状态三疣梭子蟹为研究对象,通过对其腹部肌肉、螯足肌肉和肝胰腺水溶性蛋白含量、丝氨酸蛋白酶活性和肌原纤维蛋白活性巯基含量等指标进行测定分析,研究3种状态下的梭子蟹在贮藏过程中的品质及风味变化。结果表明,在-20 ℃冻藏过程中水溶性蛋白含量、丝氨酸蛋白酶活性、肌原纤维蛋白活性巯基含量、氨基酸态氮含量、葡萄糖含量和色胺含量均呈下降趋势,下降程度由高到低排序为死蟹组>半活蟹组>活蟹组;三甲胺含量、酪胺含量和腐胺含量呈上升趋势,上升程度由高到低排序为死蟹组>半活蟹组>活蟹组;乳酸含量呈先上升后下降趋势,贮藏过程中3组梭子蟹乳酸含量由高到低排序为死蟹组>半活蟹组>活蟹组;3组梭子蟹肝胰腺中丝氨酸蛋白酶活性随着贮藏时间延长呈下降趋势,而腹部肌肉中丝氨酸蛋白酶活性在贮藏过程中呈先下降后上升趋势,丝氨酸蛋白酶活性变化幅度由高到低排序为死蟹组>半活蟹组>活蟹组;呈味核苷酸结果分析显示,风味及品质劣变程度由高到低排序为死蟹组>半活蟹组>活蟹组。综上,在-20 ℃冻藏过程中,随着贮藏时间延长,3组梭子蟹腹部肌肉和螯足肌肉的品质劣变逐渐加剧,活蟹组劣变程度最低,死蟹组劣变程度最高。
Abstract:This study investigated the quality changes in the abdomen muscle, cheliped muscle, and hepatopancreas of Portunus trituberculatus in different initial states [live crab (LC), half-dead crab (HDC), and dead crab(DC) before storage] during frozen storage at -20 ℃. Analyses were conducted on various indicators, including water-soluble protein content, serine protease activity, and myofibrillar protein active sulfhydryl group content, to assess the quality and flavor changes in the three crab states during storage. The results revealed that during -20 ℃ frozen storage, the water-soluble protein content, serine protease activity, myofibrillar protein active sulfhydryl group content, amino acid nitrogen content, glucose content, and tryptamine content exhibited a declining trend, with the degree of decline ranked as DC>HDC>LC. Trimethylamine(TMA) content, tyramine content, and putrescine content increased, with the degree of increase ranked as DC>HDC>LC. Lactate content initially increased and then decreased, with the overall content ranked as DC>HDC>LC during frozen storage. Serine protease activity in the hepatopancreas of all three crab groups decreased over time, while in the abdomen muscle, it initially decreased and then increased. The extent of serine protease activity variation was ranked as DC>HDC>LC. Nucleotide analysis indicated that the degree of flavor and quality deterioration was the highest in DC, followed by HDC, and the lowest in LC. In summary, during -20 ℃ frozen storage, the quality of the abdomen muscle and cheliped muscle in all three crab groups gradually deteriorated over time. LC exhibited the least degree of deterioration, while DC showed the most significant deterioration.
