中文摘要: 利用CiteSpace对红曲液态发酵和固态发酵的中英文文献(中文文献559篇,英文文献384篇)进行可视化分析,通过年发文量、作者、机构及关键词的共现、聚类和突现分析,生成发文量趋势图、合作共现图和关键词聚类图表等,进而对研究热点和趋势进行分析。结果表明,中英文的研究热点均关注于发酵工艺的优化,未来的研究趋势都趋向探究红曲及其发酵产物的抗氧化、降血脂等活性功能。对红曲固态发酵和液态发酵的研究目前取得一定成就,但还需作者和机构之间加强交流,深入探究红曲及其发酵产物的医药和食用功能,提高红曲的价值。
Abstract:By using CiteSpace,the Chinese (559 articles) and English literature (384 articles) on liquid-state fermentation and solid-state fermentation of Monascus were visualized and analyzed. Through analyses of annual publication volume, co-occurrence of authors,institutions,and keywords,as well as clustering and burst detection,trend charts of publication volume,collaborative co-occurrence maps,and keyword clustering visualization were generated,followed by further exploration of research hotspots and trends. The results indicated that both Chinese and English research hotspots focused on optimizing fermentation processes,with future research trends moving toward exploring the antioxidant and lipid-lowering activities of Monascus and its fermentation products. Meanwhile,research on solid-state fermentation and liquid-state fermentation has achieved certain progress. However,there is still a need for enhanced communication between authors and institutions,as well as for in-depth exploration of the medicinal and edible properties of Monascus and its fermentation products,so as to further enhance the value of Monascus.
