中文摘要: 以虾加工副产物蛋白酶解液为原料,通过筛选不同种类的还原糖,研究反应温度、反应时间、还原糖添加量、反应pH值对美拉德反应产物的褐变程度和感官评分等指标的影响。通过单因素结合响应面法对美拉德反应工艺参数进行优化。结果表明,最佳工艺条件为反应温度98.0 ℃、反应时间103 min、反应pH7.0、还原糖添加量2.4%(核糖与木糖质量比为1∶2),在此工艺条件下,美拉德反应液的感官评分为8.90±0.05,色泽鲜亮,具有独特的滋味、气味,虾味浓郁,无不良苦味。

Abstract:With the enzymatic hydrolysate of shrimp processing byproduct as the raw material,the effects of four factors—reaction temperature,reaction time,reducing sugar addition amount,and reaction pH—on indicators such as the browning degree and sensory score of Maillard reaction products were studied after the screening of different reducing sugars. The Maillard reaction process parameters were optimized through single factor tests combined with response surface methodology. The results showed that the optimum process parameters were identified as the reaction temperature of 98.0 ℃,the reaction time of 103 min,the reaction pH7.0,and the reducing sugar addition amount of 2.4% (the mass ratio of ribose to xylose at 1∶2). Under these conditions,the Maillard reaction solution showed the sensory score of 8.90±0.05,with a bright color,a unique aroma,rich shrimp flavor,and no undesirable bitterness.
