中文摘要: 采用豆酱传统的制作工艺,将花生加入到制曲工艺中,人工接种后在自然条件下发酵,得到具有花生香气和甜味的花生豆酱。对人工接种制曲和自然发酵的花生豆酱的关键工艺进行优化,制备四粒红花生豆酱和高油酸花育965花生豆酱,并以纯大豆酱为对照,观察花生豆酱在发酵过程中的营养理化指标及安全特性的变化。结果表明,花生与大豆质量比为2∶8、菌种复配比例(凝结芽孢杆菌∶米曲霉)为1∶1、发酵56 d为最佳工艺,在该条件下,人工接种的两种花生豆酱的氨基酸肽氮、总酸、脂肪以及8种氨基酸的含量提高。
Abstract:The peanut soybean paste with both the aroma and sweet taste of peanuts was developed by addition of peanuts into the traditional soybean paste-making process,artificial inoculation,and fermentation under natural conditions. The key parameters for producing peanut soybean paste under artificial inoculation and natural fermentation were optimized. The peanut soybean paste products were prepared with two peanut varieties ′Silihong′ and high-oleic acid ′Huayu 965′. With the pure soybean paste as the control,the changes in nutritional and physicochemical indicators and safety properties of the peanut soybean paste during fermentation were investigated. The results demonstrated that the optimal conditions were a peanut-to-soybean mass ratio of 2∶8,a microbial inoculum (Bacillus?coagulans?to?Aspergillus?oryzae) ratio of 1∶1,and a fermentation period of 56 days. Under these optimal conditions,the two peanut soybean paste products under artificial inoculation showed increases in the content of amino acid nitrogen,total acids,fat,and eight specific amino acids compared with the control.
