中文摘要: 该文以黑麦花粉肽为研究对象,构建体外模拟胃肠模型,测定黑麦花粉肽模拟消化前后的相对分子质量分布、体外抗氧化和降糖活性的变化。结果表明:黑麦花粉肽中相对分子质量低于1 kDa占比86.09%,模拟胃、肠消化后,低分子量肽段含量有所提高,小于1 kDa含量占比分别增加了8.72%、12.19%。DPPH自由基和ABTS+自由基清除率结果显示,模拟体外胃、肠消化可明显增强其抗氧化活性,在6 mg/mL质量浓度下分别提高14.13%、10.02%;多种体外降糖活性评价结果显示,黑麦花粉肽及胃液、胃肠液均可有效抑制α-淀粉酶、α-葡萄糖苷酶、二肽基肽酶-IV(dipeptidyl peptidase IV,DPPIV)活性,同时可显著提高抗晚期糖基化终末产物(advanced glycation end products,AGEs)活性。
Abstract:A simulated gastrointestinal digestion model was established for rye pollen peptides in vitro,and the relative molecular weight distribution and the antioxidant and blood glucose-lowering activities of rye pollen peptides were measured before and after simulated digestion. The results showed that the relative rye pollen peptides with the molecular weights lower than 1 kDa accounted for 86.09%. After simulated gastric and intestinal digestion,the content of peptides with molecular weights<1 kDa increased by 8.72% and 12.19%,respectively. The simulated gastrointestinal digestion in vitro significantly enhanced the antioxidant activity of rye pollen peptides. Specifically,the simulated gastrointestinal digestion of rye pollen peptides at 6 mg/mL increased the DPPH and ABTS+ free radical scavenging activities by 14.13% and 10.02%,respectively. Rye pollen peptides and the gastric fluid and gastrointestinal fluid containing the digested peptides effectively inhibited the activities of α-amylase,α-glucosidase,and dipeptidyl peptidase IV (DPPIV) while significantly increasing the anti-advanced glycation end products (AGEs) activity.
