中文摘要: 以大连红灯樱桃、沈农树莓为原料,研制具有耐烘焙特性和高营养保留的低糖复合果酱,考察低甲氧基果胶添加量(0.2%、0.6%、1.0%)对果酱烘焙耐性和质构特性的影响,以及超高压灭菌(300~500 MPa,20 min)和热处理(100 ℃沸水浴加热20 min)对复合果酱感官品质和营养保留的影响。结果显示,黏度随低甲氧基果胶添加量的增加而升高,流变特性也表现出较大差异。低甲氧基果胶的添加改善了果酱的耐烘焙特性,烤后脱水率降低,颜色稳定性均显著提高。超高压灭菌和与传统热处理相比,300 MPa、20 min超高压灭菌后的果酱花色苷含量和VC含量显著增加。综上,通过添加低甲氧基果胶和超高压灭菌制备的低糖复合果酱的烘焙耐性和营养品质更好。
Abstract:Dalian red light cherry and Shennong raspberry were used as raw materials to develop low-sugar compound jam with baking resistance and high nutrient retention. The effects of low-methoxyl pectin addition(0.2%,0.6%,and 1.0%) on the baking resistance and texture characteristics of the compound jam were studied. In addition,the effects of ultra-high pressure sterilization (300-500 MPa,20 min) and heat sterilization(heating in a boiling water bath at 100 ℃ for 20 min) on the sensory quality and nutrient retention of the compound jam were investigated. The results showed that with the increase in low-methoxyl pectin addition,the viscosity increased and the rheological properties varied greatly. The addition of low-methoxyl pectin improved the baking resistance of jam,reduced the dehydration after roasting,and significantly improved the color stability. Compared with heat sterilization,ultra-high pressure sterilization at 300 MPa for 20 min significantly increased the anthocyanin content and VC?content of the jam. In conclusion,the baking resistance and nutritional quality of the low-sugar compound jam prepared by addition of low-methoxyl pectin and ultra-high pressure sterilization were better.
