中文摘要: 为探讨葡萄糖发酵物部分替代脱氢乙酸钠对卤煮鸡胸肉保藏特性的影响,该试验采用均匀设计试验方法,选用7种不同复配比葡萄糖发酵物和脱氢乙酸钠复配进行卤煮鸡胸肉加工,并在0~4 ℃冷库中保藏。分别测定第0、4、7、14、21天卤煮鸡胸肉的菌落总数、大肠菌群数、pH值、色差(L*值、a*值、b*值)及感官评分。结果表明,与空白组相比,不同复配比例的葡萄糖发酵物和脱氢乙酸钠对卤煮鸡胸肉中菌落总数和大肠菌群数均具有显著的抑制作用,其中葡萄糖发酵物添加量为1.6%、脱氢乙酸钠添加量为0.02%的组合效果最佳。此外,该复配方案在冷藏期内能较好地维持产品的品质,pH值在保藏期间保持稳定,色差(L*值、a*值、b*值)变化较小,感官评分较高,表明产品的稳定性良好。
Abstract:The study investigated the effects of substituting sodium dehydroacetate with glucose fermentation products on braised chicken breast preservation. This experiment adopted the uniform design test method,using seven different compounding ratios of glucose fermentation products and sodium dehydroacetate for processing braised chicken breast and storing them in a refrigerated environment at 0-4 ℃. The aerobic plate count of the braised chicken breast was measured on days 0,4,7,14,and 21,as well as coliform count,pH value,color difference (L* value,a* value,and b* value),and sensory score. Results showed that compared with the blank group,the glucose fermentation products and sodium dehydroacetate of different compounding ratios all exhibited significant inhibitory effects on the aerobic plate count and coliform count of the braised chicken breast.The combination of 1.6% glucose fermentation product and 0.02% sodium dehydroacetate had the best inhibitory effect. Moreover,this combination could well maintain the quality of the product during the refrigeration period,with pH value remaining stable during storage,small changes in color difference(L*,a*,and b* values),and high sensory scores,indicating good product stability.
