中文摘要: 为制备高品质的蛇瓜干片,比较热风干燥、真空冷冻干燥和日晒干燥对蛇瓜干燥特性、化学成分和生物活性(化学和细胞抗氧化性、α-淀粉酶和α-葡萄糖苷酶抑制活性)的影响。结果发现,热风干燥对蛇瓜的干燥速率最快,所得瓜片总酚和总黄酮含量高,分别为0.16%和0.18%。真空冷冻干燥所得瓜片结构松散,颜色及形态好,总糖含量高,为23.77%;热风干燥和日晒干燥所得瓜片结构皱缩且有褐变。热风干燥提取物对DPPH·和ABTS+·具有更高的清除能力;可有效保护HepG2细胞免受H2O2损害,显著降低活性氧(reactive oxygen species,ROS)水平、提高超氧化物歧化酶(superoxide dismutase,SOD)、过氧化氢酶(catalase,CAT)活性和谷胱甘肽酶(glutathione,GSH)活性,并对α-淀粉酶和α-葡萄糖苷酶具有更高的抑制作用,且水提物优于醇提物。综上,热风干燥可以制备得到更高品质的蛇瓜干制品,蛇瓜提取物具有较好的生物活性,可作为功能食品开发原料。
Abstract:In order to prepare high-quality dried snake gourd slices, the effects of hot-air drying (HD),vacuum freeze-drying(FD), and sun drying(SD) on the drying characteristics, chemical composition, and biological activity (chemical and cellular antioxidant, α-amylase, and α-glucosidase inhibitory activity) were compared. The results showed that HD had the fastest drying rate and yielded higher content of total phenols and flavonoids (0.16% and 0.18%, respectively). The snake gourd slice treated by FD had a loose structure,good color and morphology, and high total sugar content (23.77%). The structures of snake gourd slices after HD and SD were shriveled and had browning. Extracts by HD had a higher scavenging ability for DPPH· and ABTS+·. It could effectively protect HepG2 cells from H2O2 damage, significantly reduce the level of reactive oxygen species (ROS), increase the activity of superoxide dismutase (SOD), catalase (CAT), and glutathione (GSH), and had a higher inhibitory effect on α-amylase and α-glucosidase. The water extracts were better than the alcohol extracts. In conclusion, the dried products of snake gourd could be prepared with higher quality by HD. The extracts of snake gourd had good biological activity and could be used as raw materials for the development of functional food.
