中文摘要: 为研究体外静态消化模型下芒果浆对植物乳植杆菌发酵乳品质的影响,向发酵乳中添加不同浓度的芒果浆后,进行体外模拟口腔、胃、小肠和大肠消化处理,以活菌数、总酚含量、总黄酮含量、ABTS+·清除率和DPPH·清除率为评价指标,测定上述指标在各消化阶段前后的变化情况。结果表明:芒果浆添加量20%的发酵乳样品,在各消化阶段中,发酵乳中保留的植物乳植杆菌活菌数均在6 lg (CFU/g)以上。芒果浆添加量大于30%时对乳脂产生稀释作用,降低植物乳植杆菌对胃肠环境耐受性。经模拟口腔消化阶段后,4种芒果浆添加量的样品中总酚含量均明显下降,在后续的消化阶段中均呈上升趋势。其中,在模拟胃消化之后的消化阶段中,芒果浆添加量为20%的样品总酚含量明显高于其他芒果浆添加量的样品,其在横结肠阶段中含量达到最高,为19.13 mg GAE/mL。胃消化能促进黄酮类物质的释放,在此阶段,添加芒果浆的样品总黄酮含量明显提高。经肠道消化后的芒果浆添加量为20%的样品的抗氧化活性均明显提高,与其他芒果浆添加量相比,20%芒果浆添加量的发酵乳ABTS+·清除率和DPPH·清除率均较高。
Abstract:In order to investigate the impact of mango pulp on the quality of fermented milk with Lactiplantibacillus plantarum based on in vitro digestion model, different concentrations of mango pulp were added to fermented milk. Then, oral, stomach, small intestine, and large intestine digestion was simulated in vitro. The live bacterial count, total phenol content, total flavonoid content, and ABTS+· and DPPH· scavenging rates were taken as evaluation indicators, and their changes before and after each digestive stage were determined.The results indicated that adding 20% mango pulp to the fermented milk maintained a live bacterial count of Lactiplantibacillus plantarum above 6 lg (CFU/g) throughout all digestive steps. However, when the addition rate exceeded 30%, it diluted the milk fat and reduced the tolerance of Lactiplantibacillus plantarum to gastrointestinal conditions. After oral digestion, there was a significant decrease in total phenol content across all samples with varying levels of mango pulp addition; however, this content increased during subsequent digestive stages. Notably, samples with 20% mango pulp addition exhibited significantly higher total phenol content than those with other addition rates after gastric digestion, reaching up to 19.13 mg GAE/mL in the transverse colon. Gastric digestion promoted the release of flavonoid compounds while leading to a significant increase in total flavonoid content for samples with mango pulp. Furthermore, antioxidant activity notably increased in the samples with 20% mango pulp addition following intestinal digestion; compared with other mango pulp addition rates, the ABTS+· and DPPH· scavenging rates of the fermented milk with 20% mango pulp addition were both higher.
