中文摘要: 为探究不同品种香菇子实体品质差异,建立不同品种香菇子实体品质评价体系。该文以12个品种香菇子实体为研究对象,测定其17项外观品质、内在气体品质,分析香菇子实体品种间各个品质指标的变异性,通过主成分分析法、聚类分析法和辨别分析法对香菇子实体的品质作出综合性评价。结果表明,12个品种香菇子实体品质指标存在差异性,香菇子实体L*(亮度)值差异明显,范围为47.1~58.3,变异系数6.1%,其中‘1190’ L*(亮度)值最大;‘1171’的菌盖厚度、菌柄直径较大和硬度较高,分别为 (23.7±3.8) mm、(60.2±4.9) mm、(6.6±0.9) kg/m2;‘E255’的菌盖直径最大,为(67.6±3.8) mm;其中菌盖厚度、菌盖直径、菌柄直径、硬度指标变异系数均大于30%,表明品种之间存在较大差异性。经过主成分分析和线性判别分析,其累计方差贡献率分别为95.971 1%和95.238 4%。聚类分析将12个品种香菇子实体分为三类群,不同香菇气体含量差异明显。
Abstract:The quality differences among different varieties of shiitake mushrooms were studied to establish a quality evaluation system for shiitake mushrooms of different varieties. A total of 17 appearance quality and inner gas quality indicators of 12 shiitake mushroom varieties were determined. The variability of each quality indicator among the varieties was analyzed, and the quality of shiitake mushrooms was comprehensively evaluated by principal component analysis, cluster analysis, and discriminant analysis. The results showed that the quality indicators of shiitake mushrooms presented variability among the 12 varieties. The L* value of shiitake mushrooms varied significantly, ranging from 47.1 to 58.3, with a coefficient of variation being 6.1%, and the variety ′1190′ had the largest L* value. The variety ′1171′ had higher cap thickness, stipe diameter, and hardness, which were(23.7±3.8) mm,(60.2±4.9) mm, and(6.6±0.9) kg/m2, respectively. The variety ′E255′had the largest cap diameter of(67.6±3.8) mm. The coefficients of variation of cap thickness, cap diameter,stipe diameter, and hardness were all greater than 30%, indicating large variability of these indicators among varieties. The principal component analysis and linear discriminant analysis showed the cumulative variance contribution rates of 95.971 1% and 95.238 4%, respectively. The cluster analysis classified the 12 varieties of shiitake mushrooms into 3 groups. The gas content of different shiitake mushrooms varied significantly.
