中文摘要: 以鲜牛百叶为研究对象,以增重率、脱黑膜效果(脱黑膜时间和脱黑膜面积比)、感官评分为评价指标,开展复合脱膜剂对牛百叶脱黑膜效果评价及脱黑膜工艺优化。通过单因素试验,以复合脱膜剂浓度、脱黑膜温度、复合脱膜剂溶液体积比3个因素为变量,设计正交试验,优化牛百叶脱黑膜工艺。结果 表明最佳牛百叶脱黑膜工艺条件:复合脱膜剂为0.6%氢氧化钠溶液+0.5%猕猴桃蛋白酶溶液、脱黑膜温度为50 ℃、0.6%氢氧化钠溶液和0.5%猕猴桃蛋白酶溶液体积比为1∶1,此条件下牛百叶脱黑膜效果最好,脱黑膜时间为30 min,脱黑膜面积比达99%,增重率达55.21%,感官评分84.7。
Abstract:Taking fresh beef tripe as the research object,a study was conducted to evaluate the effect of compound membrane-removing agents on black membrane removal from beef tripe and optimize the process,with weight gain rate,black membrane removal effect (including black membrane removal time and area ratio),and sensory properties as the evaluation indicators. Through single-factor experiments,orthogonal tests were designed with three factors as variables,namely the concentration of the compound membrane-removing agent,the temperature for black membrane removal,and the volume ratio of the compound membrane-removing agent solution,to optimize the black membrane removal process for beef tripe. The results showed that the optimal process conditions for black membrane removal from beef tripe were as follows:the compound membraneremoving agent was 0.6% sodium hydroxide solution + 0.5% kiwifruit protease solution;the temperature for black membrane removal was 50 ℃,and the volume ratio of 0.6% sodium hydroxide solution to 0.5% kiwifruit protease solution was 1∶1. Under these conditions,the black membrane removal effect for beef tripe was the best,with the black membrane removal time of 30 mins,the ratio of black membrane removal area of 99%,the weight gain rate of 55.21%,and the sensory score of 84.7.
