中文摘要: 应用高压射流均质方法对豆粕进行超微细化处理获得纳米化的豆粕水分散液,以此作为乳化剂制备O/W型Pickering乳液,并对乳液微观形态和稳定性等进行研究。试验结果显示,在相同的操作参数下,相比于直孔阀,应用三槽阀的高压射流均质处理的微细化效果更好,豆粕颗粒尺寸明显减小,粒径指标d( 0.5) 降至0.157 μm。纳米化的豆粕水分散液与一定比例豆油通过超声乳化可以形成稳定的Pickering乳液;1.2%纳米化豆粕水分散液稳定的O/W型Pickering乳液内油滴分散均匀,粒径指标d( 0.5) 为1.396 μm,其剪切黏度较低。综上,豆粕基O/W型Pickering乳液的乳化性能良好,可有效应用于生物活性成分的保护和传递。

Abstract:High-pressure jet homogenization was applied to ultra-fine processing on soybean meal,and a nanosized aqueous dispersion was obtained. The aqueous dispersion was used as an emulsifier for the preparation of O/W Pickering emulsions,and the microscopic morphology and stability of the emulsion were tested. The data showed that with the same operating parameters,high-pressure jet homogenization process using a three-slot valve achieved a superior refinement effect compared with a straight-orifice valve,as evidenced by a significant reduction in soybean meal particle size,with the particle size index d( 0.5) decreasing to 0.157 μm. A mixture of a nanosized aqueous dispersion and a certain portion of soybean oil can be converted into a stable Pickering emulsion by ultrasonic emulsification. In the stable O/W Pickering emulsion stabilized by 1.2% nanosized soybean meal′s aqueous dispersion,the oil droplets were uniformly dispersed,with a particle size index d( 0.5) of 1.396 μm, and relatively low shear viscosity was observed. The research revealed that O/W Pickering emulsion based on soybean meal had good emulsifying properties and could be effectively applied to the protection and delivery of bioactive components.
