中文摘要: 随着健康意识的提升,高粱因富含抗性淀粉(resistant starch,RS)而备受关注。抗性淀粉在人体小肠中难以被完全消化吸收,却能在大肠中发酵,产生有益的短链脂肪酸。开发高抗性淀粉的高粱食品,既能满足糖尿病患者、健身爱好者和肥胖人群等特定人群的饮食需求,也为食品产业带来新机遇。该文综述了高粱抗性淀粉的研究进展,重点探讨了挤压膨化技术在高粱抗性淀粉制备中的应用及其对高粱淀粉结构和抗性淀粉含量的影响,并对其未来的发展前景进行展望。
Abstract:With the improvement of health awareness,sorghum has attracted increasing attention due to its high content of resistant starch(RS).Resistant starch is difficult to fully digest and absorb in the human small intestine,but it can be fermented in the large intestine to produce beneficial short-chain fatty acids.The development of high-resistant starch sorghum foods can not only meet the dietary needs of specific populations such as diabetic patients,fitness enthusiasts,and the obese but also bring new opportunities to the food industry.This paper reviewed the research progress on resistant starch in sorghum,with emphasis on the application of extrusion puffing technology in the preparation of resistant starch from sorghum and discussed its effect on the structure of sorghum starch and the content of resistant starch.The future development prospects were anticipated.
