中文摘要: 为开发低剂量辐照黑椒预调理猪排的最佳工艺配方,以猪排为原料,探究不同辐照剂量及复配抗氧化剂对预调理猪排的色度值、菌落总数、感官评分、游离蛋白浓度和脂质氧化等理化性质的影响。结果表明,在4 ℃贮藏条件下,通过测定贮藏期间理化指标变化,综合评价筛选得出2 kGy的低剂量辐照可以有效延长预调理猪排贮藏时间,且对其风味感官影响较小。在此基础上采用D-最优混料设计对筛选出的抗氧化剂进行配方优化,结果表明:竹叶抗氧化物添加量0.10%、茶多酚添加量0.30%、维生素E(生育酚)添加量0.20%,在此条件下预调理猪排在4 ℃贮藏时的菌落总数为(3.51±0.03)lg(CFU/g)、气味感官评分为27.7±1.0,硫代巴比妥酸反应物(thiobarbituric acid reactive substances,TBARS)值为(0.168±0.003)mg/kg,与预测值相差较小,预调理猪排的抗氧化效果最好,在预调理猪排辐照处理后诱导产生的氧化链式反应中,发挥潜在的综合保护作用。
Abstract:To develop the optimal formulation for low-dose irradiated pre-seasoned pork chops with black pepper,this study used pork chops as the raw material to investigate the effects of different irradiation doses and compound antioxidants on physicochemical properties such as color difference,aerobic plate count,sensory evaluation,free protein concentration,and lipid oxidation.The results showed that under 4 ℃ storage conditions,by measuring changes in physicochemical indicators during storage,a comprehensive evaluation and screening identified that a low-dose irradiation of 2 kGy could effectively extend the shelf life of pre-seasoned pork chops with minimal impact on flavor and sensory attributes.Building on this,a D-optimal mixture design was employed to optimize the formulation of the selected antioxidants.The results indicated that the optimal antioxidant combination consisted of bamboo leaf antioxidant(0.10%),tea polyphenols(0.30%),and vitamin E(tocopherol,0.20%).Under these conditions,the pre-seasoned pork chops stored at 4 ℃ exhibited an aerobic plate count of(3.51±0.03)lg(CFU/g),an sensory odor score of 27.7±1.0,and a thiobarbituric acid reactive substances(TBARS)value of(0.168±0.003)mg/kg,which deviated slightly from the predicted values.This formulation demonstrated the best antioxidant effect,playing a potential comprehensive protective role in mitigating the oxidative chain reactions induced by irradiation in pre-seasoned pork chops.
