中文摘要: 为研究新型南美白对虾脱壳技术,以木瓜蛋白酶为作用酶,通过控制变量法确定超声波辅助木瓜蛋白酶对南美白对虾进行脱壳的最佳加工工艺。结果表明,最佳工艺为木瓜蛋白酶浓度0.75 mg/mL、料液比1∶6(g/mL)、酶解时间3 h、超声时间40 min、超声功率300 W。进一步探究超声波辅助木瓜蛋白酶处理对虾仁理化性质的影响,结果表明,3组虾仁的pH值无显著差异,分别为7.01、6.94、7.00;新鲜对照组虾仁的色泽最差,超声波辅助木瓜蛋白酶试验组虾仁色泽最好,L*值、a*值、b*值均优于其他两组;超声波辅助木瓜蛋白酶试验组虾仁的汁液流失率和持水性均优于新鲜对照组和木瓜蛋白酶试验组,分别为2.32%和3.22%。
Abstract:A new shelling technology was developed for Penaeus vannamei based on ultrasound-assisted papain hydrolysis.The control variable method was employed to optimize the shelling process.The results indicated that the optimal shelling process was as follows:a papain concentration of 0.75 mg/mL,a solid-to-liquid ratio of 1∶6(g/mL),hydrolysis time of 3 h,ultrasonication time of 40 min,and ultrasonic power of 300 W.Furthermore,the effects of ultrasound-assisted papain hydrolysis on the physicochemical properties of shrimp meat were studied.The results indicated that the pH values of the three groups of shrimp meat were 7.01,6.94,and 7.00,which showed no significant differences.The shrimp meat in the fresh control group had the worst color,while that in the ultrasound-assisted papain group had the best color,showing superior L*,a*,and b* values over the other two groups.In addition,the ultrasound-assisted papain group outperformed the other two groups in terms of the juice loss rate and water-holding capacity of shrimp meat,which were 2.32%and 3.22%,respectively.
