中文摘要: 为研究海藻膳食纤维对烤制鸡肉品质的影响,分析海藻膳食纤维种类和添加量、食盐添加量及糖添加量对烤制鸡肉得率及感官品质的影响。结果表明,相比于单一海带和紫菜膳食纤维以及复配海藻膳食纤维,单一江蓠膳食纤维对烤制鸡肉的得率和感官品质的改善作用最为明显。在此基础上,以烤制鸡肉的得率为指标,结合响应面试验优化江蓠膳食纤维、食盐及糖添加量,获得最佳工艺配方:以100 g鸡肉计,江蓠膳食纤维添加量1.50%、食盐添加量1.40%、糖添加量2.70%;应用此配方烤制鸡肉得率最高,预测值为77.30%,实测值为77.11%,相比于空白组,烤制鸡肉得率提高10%。添加江蓠膳食纤维能够改善烤制鸡肉的口感、色泽,相比空白组,其硬度和咀嚼性分别降低43.08%和40.48%,且丙二醛含量降低57.33%(p<0.05)。研究结果表明江蓠膳食纤维在改善烤肉制品得率、嫩度和安全性等方面具有良好的效果。
Abstract:To study the effects of seaweed dietary fibers on the quality of grilled chicken,the effects of type and content,salt content,and sugar content of seaweed dietary fibers on the yield and sensory quality of the grilled chicken were analyzed.According to the results,compared to single-source dietary fibers from Laminaria japonnica and Porphyra as well as combined seaweed dietary fibers,single-source Gracilaria dietary fibers could best improve the yield rate and sensory quality of the grilled chicken.On this basis,with the yield of the grilled chicken as the index,Gracilaria dietary fibers,salt content,and sugar content were analyzed by response surface optimization.The best formula was then obtained:in a case of 100 g chicken,Gracilaria dietary fiber content of 1.50%,salt content of 1.40%,and sugar content of 2.70%.With this formula,the yield of the grilled chicken achieved the highest.The predicted value was 77.30%,and the measured value was 77.11%,which was 10% higher than that of the blank group.The addition of Gracilaria dietary fibers could improve the taste and color of the grilled chicken.Compared with the blank group,the grilled chicken with Gracilaria dietary fibers witnessed a reduction in its hardness and chewiness by 43.08% and 40.48%,respectively,and also in its content of malondialdehyde by 57.33%(p<0.05).The results indicated that Gracilaria dietary fibers have the potential to improve the yield,tenderness,and safety of grilled chicken products.
